Chicken in Tomato Sauce

Chicken in Tomato Sauce

Ingredients

4 chicken portions
2 tbsp olive oil
1 onion, chopped
2 garlic cloves, crushed
1 red pepper
400 g tinned chopped tomatoes
1 tbsp basil
1 tbsp parsley
1 tbsp chives
1 green pepper

Method

1. Preheat oven to Gas 3, 160C, 325F.

2. Sauté chicken portions in 1 tablespoon of olive oil until browned. Remove with a slotted spoon and put in a casserole dish.

3. Heat remaining oil. Add onion and garlic, and cook for 3 minutes.

4. Add peppers and cook for a further 2 minutes. Add tinned tomatoes and herbs and simmer for 5 minutes.

5. Spoon sauce over the chicken and bake for 45 minutes.
