Penne with Cheese and Broccoli

Penne with Cheese and Broccoli


Ingredients
175g Penne Pasta
225g Broccoli Florets
1 Tablespoon Olive Oil
1 Large Onion
1 Tablespoon Cornflour
300ml Milk
60g Cheddar Cheese (Grated)


Method
1) Cook the pasta in boiling water according to the directions on the packet, adding the broccoli during the last 3 minutes of cooking time.
2) In a non-stick pan, saute the onion in the olive oil for 5 minutes until softened.
3) Blend the cornflour with a little of the milk in a jug. Gradually add the rest of the milk, then slowly add the onion, stir in the cheese and add to the pasta.
4) Return to the heat, until cheese has melted.
5) Serve and top with grated cheese if preferred.
