Courgette and tomato bake

4 courgettes -sliced
1 tin tomatoes -chopped
handful mushrooms- sliced
3 oz cheese
oil
seasoning and herbs

Lightly fry courgettes and mushrooms in oil until they are golden.
Add tomoatoes, mixed dry herbs and bring to boil - simmer for 5 mins.
Add to ovenproof dish, sprinkle with cheese.
Cover with foil and bake for 20 minutes at 190C/375F/ Gas Mark 5

Serve with crusty bread or with bowl pasta.
